It includes typical recipes from various regions of France, such as Auvergne, Provence, Brittany, Savoie... Included are Pâtés du Périgueux, souvenirs of culinary exhibitions, the recipe for Poularde Alice, Perdrix suprêmes à la Périgourdine, Dona Mistral strawberries, Oxtail à la Vigneronne... A typescript signed "Les Trésors culinaires de la France à travers la Provence. From Avignon to Monte Carlo". 1 ff. in-4 with ink annotations. Auguste Escoffier, nicknamed "Le Roi des Cuisiniers", was a culinary writer renowned for his many recipes - including the Poussins Joséphine - which led to the modernization and codification of luxury French cuisine, as well as its globalization. Our piece is a prime example of this talent.
