ESCOFFIER (Auguste, 1846-1935). "Une Heureuse Nouvelle". LAS dated July 20, 1932 and located in Monte-Carlo. In this letter, the famous French chef congratulates his American counterparts on the creation of the "Culinary Review": "The United States of America lacked a Culinary Review worthy of this great country, where cuisine holds a great place. (...) We mustn't forget that cooking is the ideal way of bringing people together and bringing joy to the home. (...) and it is with great pleasure that I greet the dawn of your interesting Revue, to which I wish a long and brilliant existence..." On the back, Escoffier has written three menus for Déjeuner, Diner and Souper, featuring a Noisette d'Agneau and Peas à l'Anglaise, a Poularde truffée and a Soufflé.
