ESCOFFIER (Auguste, 1846-1935). - Lot 12
ESCOFFIER (Auguste, 1846-1935). "Le Tournedos". Autograph piece including two handwritten versions of the birth of "Tournedos" (5 p.): "Small flying appetizer created for à la carte restaurant service. (...) When I arrived in Paris in 1865, tournedos was in vogue in all the capital's restaurants". The chef uses the recipe in several "sauces": Catalane, Massilia, Marguery, Mireille, Monselet, Polignac, La Vallière, Tyrolienne. The typescript of this recipe in various sauces, with annotations in ink, is included.
