ESCOFFIER (Auguste, 1846-1935). "Petites Carpes rosées Rabelais". Signed autograph piece describing the recipe for carps wet with white wine from Rabelais' country. One page on blue paper. Auguste Escoffier, nicknamed "Le Roi des Cuisiniers" (The King of Cooks), was a culinary writer renowned for his many recipes, which helped modernize and codify French luxury cuisine, as well as globalize it. Our piece is a prime example of this talent.
