ESCOFFIER (Auguste, 1846-1935). Signed autograph manuscript describing the recipe for "Poussins Joséphine", titled "En souvenir de l'Impératrice Joséphine, son séjour à l'Orangeraie - Strasbourg". In-8 on 1p. recto-verso, dated October 28, 1927. Auguste Escoffier, nicknamed "Le Roi des Cuisiniers" ("The King of Cooks"), was a culinary writer renowned for his many recipes - including that of Poussins Joséphine - which led to the modernization and codification of luxury French cuisine, as well as its globalization. Our piece is a prime example of this talent.
