ESCOFFIER (Auguste, 1846-1935). "Filets de Sole Dieppoise". Autograph signed piece describing the recipe for Filets de Sole à la Dieppoise for four people. One page recto-verso. Auguste Escoffier, nicknamed "Le Roi des Cuisiniers" ("The King of Cooks"), was a culinary writer renowned for his many recipes, which led to the modernization and codification of luxury French cuisine, as well as its globalization. Our piece is a prime example of this talent.
